The pinkish hue is due to a compound called glucoraphanin, which is also found in common green broccoli. In your body, glucoraphanin can be converted to compounds with anticancer properties. Store whole heads of cauliflower in a loosely sealed plastic bag in the refrigerator for 4 to 7 days.
